Marinated turkey with mushrooms, broccoli and carrots

A healthy, balanced main dish combining protein with fresh vegetables and the wellness benefits of functional mushrooms.

Ingredients

Preparation

  • 1 turkey breast
  • 2 tsp of turmeric
  • 2 tsp of Elixir Balance
  • 2 tsp of paprika (optional)
  • 150gr of sliced mushroom
  • ½ broccoli
  • 2 carrots
  • 1 cucumber (optional)
  • 1 handful of sprouts
  • 2 tbsp of of yogurt sauce with mayonnaise
  • Extra Virgin Olive Oil
  • Sea salt
  • Pepper
  1. Cut the turkey breast into cubes.
  2. Mix the Elixir Balance, turmeric and paprika (if desired) in a small bowl.
  3. Place the turkey cubes on a tray, season with a pinch of salt and pepper and add the turmeric mix. Stir well and add 1 teaspoon of olive oil to coat evenly.
  4. Leave to marinate for at least one hour.
  5. Wash and cut the broccoli into florets and blanch for 7-8 minutes before setting aside.
  6. Peel and grate the carrots.
  7. In a paella pan with a pinch of oil, sauté the mushrooms until lightly browned.
  8. Cook the diced marinated turkey in the pan with a dash of oil, turning them so that they cook evenly until lightly browned.
  9. Arrange all the different ingredients on a tray or in a salad bowl.
  10. Serve with yoghurt and mayonnaise sauce.
