Egg rolls with avocado

A tortilla loaded with protein, digestibility and healthy fatty acids from avocado and Energy from Cokare. Ideal for breakfast, brunch or lunch.

Ingredients

  • 4 organic eggs
  • 1 avocado
  • ½ lemon
  • 3 slices of organic turkey or sweet ham
  • 1 teaspoon of Energy elixir
  • 1 pinch of sweet paprika
  • a handful of parsley
  • Extra Virgin Olive Oil
  • Pepper
  • Salt
  1. Beat the eggs, season with salt and pepper. Spread them well in a paella pan with a tablespoon of virgin olive oil. Turn the tortilla before it is very golden brown and press it carefully so that it is flat. Set aside.
  2. Cut the avocado into thin slices, paint with lemon. Chop the parsley.
  3. Spread the slices of turkey or sweet ham, and the slices of avocado on the tortilla. Season and roll them carefully. Do it on a piece of plastic wrap or a mat and keep it rolled for a few minutes so that it settles and then cut it.
  4. Serve with chopped parsley and the paprika mixture with Energy elixir
