Baked potatoes with parsley oil

Baked potatoes are naturally low fat, healthy, with great source of vitamins and minerals, and so yummy!

Ingredients

  • 4 baking potatoes
  • 300gm of seasonal mushrooms
  • 3 tablespoons of Extra Virgin Olive Oil
  • 1 bunch of parsley
  • Salt and Pepper
  • Grated Parmesan Cheese to taste
  • 1 teaspoon of Elixir Balance
  1. Preheat the oven to 200ºC ( 180º Fan/ Gas 6).
  2. Clean the potatoes well and dry them with the skin, Prick them several times with a fork and sprinkle with salt. Bake directly on the oven rack for 1 to 1:30 hours, until tender.
  3. While the potatoes are cooking, slice the mushrooms. Heat two tablespoon of olive oil in a small skillet and cook until tender. Chop the parsley and add 1 tablespoon of olive oil. Salt and pepper to taste.
  4. When the potatoes are ready, cut them in half and mash the meat with a fork.
  5. Add a good spoonful of mushrooms on top of the potato, a teaspoon of elixir Balance and a spoon of parsley oil and grate a little parmesan cheese on top. 
  6. You can place the potatoes under the grill for a short moment to melt the cheese a bit.
