This Shiitake infusion has become our favourite warm up. Nothing like a bowl of this comfort food at supper.

Ingredients

  • 1 yellow onion
  • 1 garlic clove
  • 1 tbsp of Extra Virgin Olive Oil
  • 1 tsp of Elixir Focus
  • 1 handful of Shiitake mushrooms
  • 2 cups of vegetable broth without added salt
  • 1 pinch of miso
  1. Let's prepare our soup base by adding mixing sautéing the diced onion and diced garlic with 1 teaspoon of olive oil.
  2. Add the shiitake mushrooms and stir for a few minutes, add a pinch of salt and black pepper.
  3. Pour in the vegetable broth and two cups of water. Add one teaspoon of Elixir Focus and simmer on a low heat with the lid on for 15 minutes.
